Ingredients

Dough:

  • 200 ml lukewarm milk
  • 20 g honey
  • 7 g instant yeast (1 tbsp or 1 packet)
  • 1 medium egg
  • 30 ml sunflower oil
  • 20 g unsalted butter
  • 425 g all-purpose flour

Cod Mixture:

  • 450 g cod
  • 3 g salt (ยฝ tsp)
  • 3 g onion powder (1 tsp)
  • 2 g cayenne powder (โ…” tsp)
  • 1.5 g black pepper powder (ยฝ tsp)
  • 10 g mustard

Flour Mixture:

  • 50 g all-purpose flour
  • 50 g cornstarch
  • 3 g salt (ยฝ tsp)
  • 3 g onion powder (1 tsp)
  • 1.5 g black pepper powder (ยฝ tsp)

Crispy Coating:

  • 2 medium eggs
  • Breadcrumbs

To Serve:

  • Tartar sauce
  • Cheddar cheese

Instructions

  1. Prepare the Dough:
    • Pour lukewarm milk into a bowl. Add honey and yeast, then mix well. Let rest for 5 minutes.
    • Add sunflower oil, beaten egg, butter, flour, and salt. Knead for 10-12 minutes until smooth.
    • Cover the bowl and let the dough rise in a warm spot for 1 hour or until doubled in size.
  2. Prepare the Cod Mixture:
    • Cut cod into pieces and place in a bowl. Add salt, onion powder, cayenne, black pepper, and mustard. Mix well.
  3. Prepare the Flour Mixture:
    • In a separate bowl, mix flour, cornstarch, salt, onion powder, and black pepper.
    • Place the mixture in a bag. Add cod pieces and shake until fully coated.
  4. Bread the Cod:
    • Beat the eggs in one bowl and place breadcrumbs on a plate.
    • Dip each cod piece into beaten eggs, then coat with breadcrumbs.
    • Place breaded cod briefly in the freezer to firm up the coating.
  5. Shape and Bake the Buns:
    • Deflate the risen dough and divide into 12 equal pieces (about 61 g each).
    • Shape each piece into a ball, roll into a circle, and fold in half. Repeat.
    • Arrange on a parchment-lined baking sheet. Brush with beaten egg, make small slits, and sprinkle with sesame seeds.
    • Let rise for 30 minutes in a warm spot.
    • Preheat oven to 200ยฐC (392ยฐF). Bake buns for 12-18 minutes until golden brown.
  6. Fry the Cod:
    • Heat sunflower oil in a frying pan to 175ยฐC (347ยฐF) or use a deep fryer.
    • Fry cod pieces until golden and crispy. Drain on paper towels.
  7. Assemble the Burgers:
    • Slice the buns. Spread tartar sauce on the bottom bun, add a crispy cod piece, top with cheddar cheese, and close with the top bun.
