Cherry Tomato & Basil Shellbows

A simple yet elegant pasta dish with fresh herbs and a creamy cherry tomato sauce.

Ingredients:

  • 1/2 pound pasta (shellbows or any preferred shape)
  • Salted water for boiling

  • 4 tablespoons olive oil or unsalted butter
  • 4 to 6 garlic cloves, minced
  • 1 1/2 cups cherry tomatoes, halved
  • 1 tablespoon tomato paste
  • 1/4 cup white wine
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese (reserve some for serving)
  • 1 teaspoon chili flakes (reduce if preferred less spicy)
  • 2 teaspoons black pepper
  • Kosher salt, to taste

  • 2 tablespoons fresh basil, chopped
  • 1 teaspoon fresh oregano (optional)
  • Mozzarella pearls (optional, for extra creaminess)
  • Basil oil (optional, for enhanced flavor)

Instructions:

1๏ธโƒฃ Cook the pasta: Boil the pasta in salted water according to package instructions. Drain and set aside.

2๏ธโƒฃ Prepare the sauce:

  • Heat the olive oil or butter in a pan over medium heat.
  • Add the minced garlic and sautรฉ until fragrant.
  • Stir in the cherry tomatoes and let them soften slightly.
  • Mix in the tomato paste and stir well.
  • Deglaze with white wine and let it reduce.

3๏ธโƒฃ Make it creamy:

  • Pour in the heavy cream, stir, then add Parmesan, chili flakes, black pepper, and salt.
  • Let the sauce simmer for a few minutes until slightly thickened.

4๏ธโƒฃ Combine & serve:

  • Toss the cooked pasta into the sauce, stirring to coat evenly.
  • Add fresh basil and oregano, then mix again.
  • Serve hot with extra Parmesan, and if desired, mozzarella pearls and a drizzle of basil oil.
